This may be a Sam Savitt book. I wasn’t as into horses as my sisters were, but every time they showed me a horse book where the illustrations were amazing, it seemed like it was illustrated by Sam Savitt. And often written by C.W. Anderson.
Possibly Draw 50 Horses by Lee J. Ames. This author served in the military during WWII.
I found my answer. The author is Victor Perard, and the books are “How to Draw Nearly Everything” and “Drawing Horses”. I found a hardcover copy on eBay – it looks just like I remember from my childhood.
