This is a fairly new book, so probably not what you are looking for, but ‘Sir Mouse to the Rescue’ by Dirk Nielandt is about a mouse knight (“Sir Mouse”) who happens to be a girl. Her best friend is a dragon and she does rescue a prince from a tower.
No, but that book sounds wonderful! I had the one I’m thinking of in the mid-90s. I remember the mouse girl had a wonderful magical aunt mouse who gave her advice, and her house was entirely made up of repurposed human things (like a spool of thread for a dining room table, etc.)
