I’m looking for a series of books I loved. They were all biographies for
about a 4th/5th grade level. They all had a green cover. There varied in subject
from Helen Keller to Peter Stuyvesant.

This series is the “Childhood of Famous Americans”. The series originally put out by Bobbs Merrill has gone through several incarnations, with various covers, is now red, white and blue and is published by Simon and Schuster.
I think the responder is right; it’s the Childhood of Famous Americans series. When I was a child, these books were illustrated with silhouettes, but later editions had drawings. Very heavily fictionalized.
